My goal with Jovian Forge is to make knives that perform their intended task well and for a long time. I believe a knife should only add joy to the cooking experience. Whether you're working on the line for hours or preparing a meal for your family at home a sharp quality knife makes a world of difference.
Working as a Chef taught me to appreciate quality tools and equipment. There is nothing worse than struggling to do a simple prep task because your knife is falling short. In the course of my culinary career, I discovered what I did and didn't like in the knives I worked with. I use that knowledge now in the design process for JF.
